ABOUT THE SUGAR FLOWERS

 

 
 

At Marian Louise Cakes, I specialize in dressing delicious cakes with handmade sugar flowers. 

Each flower has been researched and developed for countless hours to ensure that they look as beautiful as possible. My goal is to not compete with nature, but instead to celebrate its beauty.

The sugar flowers are made from gum paste, which is composed of ingredients such as sugar and CMC powder (cellulose gum / carboxmethyl cellulose) that aid the paste to be sculpted and allow it to dry hard. I make all gum paste from scratch.

 

THE JOURNEY OF A SUGAR FLOWER

The process of a sugar flower is a long and meticulous process. On average, it takes 2.5 days to complete a flower.

 

 
 

i. Colour

Based on the color scheme of the event, I carefully tint the paste with food coloring.

ii. Roll 

I roll the paste to about 1-2mm thin. A thinner paste means a more ‘life like’ flower.

iii. Cut

Each petal is individually cut using cutters specific to that flower. For example, a peony has around 47 petals and a rose has around 35 petals.

iv. Wire

Based on the flower, I insert a thin wire into every petal. This gives it strength and allows me to move it during assembly.

v. Vein 

For a life-like look, I press each petal between a silicone veiner to give it an impression. For example, a sugar leaf requires a leaf veiner.

 

vi. Shape 

Using a ball tool, I manipulate every petal by thinning, curling, and/or frilling it to give it character and movement.

vii. Dry 

Each petal needs to dry completely for 24 hours. After this period, the petals become fragile like porcelain.

viii. Dust 

I dust the dried petals with petal dusts to give it more depth and character.

iv. Assemble 

Each petal is assembled together using floral tape. This is when the individual details of a flower come together .

x. Arrange 

The flowers, foliage, and filler are arranged thoughtfully and carefully into the cake to create a beautiful arrangement and design.

 

CAUTION

 

 
 

Made from gum paste, sugar flowers are safe to insert into cakes as they are not sprayed with toxic pesticides and other unknown products that are present in fresh, real flowers. However, sugar flowers should not be ingested as there are wires (for strength and movement), thread and plastic stamens (for detail in flowers such as anemones and poppies), floral tape (for assembly), and polystyrene bases (for strength; to help flowers such as roses and peonies become more lightweight). All sugar flowers must be removed before the cake is cut and served.

The sugar flowers can be set aside and kept as a keepsake and memory of your event.
